Red Lentil Pasta

I really love pasta, but I have to make sure I get my protein. One way I do this is with Red Lentil Pasta. This pasta is quick, easy, and filling. Plus, it makes great leftovers, too!

Red Lentil Pasta

Red Lentil Pasta
Makes 6-8 servings

2 tbs. olive oil
1 c. chopped onions
2-3 tbs. minced garlic
2 c. red lentils, rinsed
3 c. water
1- 28 ounce can crushed tomatoes
½ tsp dried basil
¼ tsp oregano
¼ tsp red pepper flakes
2 tsp dried parsley
1 pound pasta
Salt and pepper, to taste

While the pasta water is boiling, heat the oil in a sauce pan over medium heat. Add the onions and garlic. Cover and cook until softened, about 5 minutes. Stir in the lentils and water. Add salt to taste. Cover and cook until tender, about 15 minutes. Add the remaining ingredients, except for the pasta. Put the pasta on to boil while you simmer the sauce, uncovered, stirring occasionally. Spoon some pasta into bowls and top with the sauce. Serve with a salad and some nice bread!
