Rhubarb, Cheddar, and Goat Cheese Paninis

I have a very prolific rhubarb bush, but I always struggle to think of things to do with it other than coffee cakes and pies. I decided to try putting it in a panini. It was delicious.

Rhubarb Cheddar and Goat Cheese Panini

Makes 2 paninis
4 slices of your favorite bread
4 1 ounce slices of mild, white cheddar
4 tablespoons goat cheese
1 stalk (50 grams) of rhubarb, sliced
1.5 tablespoons (20 grams) white sugar
1 tablespoon lemon juice

In a small pan, combine the rhubarb, sugar, and lemon juice. Stir and cook over medium heat for 5-10 minutes, or until rhubarb is tender.

To assemble each sandwich: Place 2 pieces of the cheddar on one piece of bread, top it with half of the rhubarb, and then put 2 tablespoons of goat cheese on top. Close the sandwich, and cook on your panini press until the cheese melts and the bread is well-marked.

Eat hot off the panini press!
